Sneaky Cupcakes

So this is what I’ve been up to lately:

My friend Stephanie and I held a baby shower for one of our neighbors on Thursday which kept me pretty busy this week.

It seemed cruel to bake five dozen mini cupcakes if E (and I) couldn’t eat any of them so I made these dairy-and-egg-free chocolate cupcakes. I was a little worried that people might taste the difference but they went pretty quickly and a few people without any dietary restrictions (“Normies,” we call them) even asked for the recipe.

So, success!

  1. Pastry bags and tips have been on my wish list for quite some time now. They make frosting look so pretty. These look like they'd satisfy my sweet tooth. In fact, I would like one right now, please.

  2. I didn't even know they weren't "normal". Good job. They were yummy. It was a great shower too. My kids loved the bags of candy I brought home, and I loved the chocolate fountain while I was there.
